I maintain that the most interesting restaurant set-ups can only be found at the most arbitrary of locales which elude the public with a certain twinge of inaccessibility — after all, real estate is a disproportionately exorbitant luxury in Singapore’s F&B scene. But the community always finds a way to congregate in cosy little alcoves like at Rochester, where Gary’s Restaurant is located.
As simple as Pizza sounds, pizza making is undoubtedly a finesse decided by the finest margins through control of the gluten and taming of the woodfire. It’s a kind of exquisite artistry that, despite its humble roots, Singapore has a shortage of — but if discerning gourmands have a favourite establishment to flock to for pizza, it has to be La Bottega Enoteca.
Saizeriya is a household name and an institution of culinary trends, forged from the ground up in 1967 Japan. Originally conceptualised as a family-friendly Western food restaurant, it grew into a remarkably influential house of culinary arts.
Witnessing one of your favourite restaurants lower its shutters for the last time is never a good feeling and the abrupt demise of Salted & Hung made me quite demoralised. However, Chef Drew extended an olive branch in this bleak year of closings as he set up a new restaurant, Cenzo, along swanky Club Street.
Watching a fledgling concept blossom into a successful restaurant is always a heartwarming experience for me. Supporting local is more than just a mantra, it’s a conviction in Singapore’s latent talent — and Drunken Farmer is one of the few places that I can proudly say I’ve seen grow from its infancy.
There is a certain romanticism to handmaking pasta. The push and pull when you knead the dough. The tactile euphoria of tracing your fingers over supple rolled-out sheets. The limitless satisfaction of moulding them into intricate shapes. And there’s perhaps no individual more familiar with the art of handmade pasta in Singapore than the man handmaking the pasta at the new Forma in Joo Chiat. Continue reading “Forma”
