We’re witnessing the start of a new chapter for this surprisingly under-the-radar hotel bar, housed within far-flung Shangri-La Singapore. Equipped with a new team full of new faces, recruited for their diverse backgrounds, Origin Bar is starting on the path towards long-overdue plaudits.
In the distance, we could faintly make out the familiar silhouette of the iconic Colbar by Portsdown Road. Beside it, a detached house stands by its lonesome, overlooking a spacious parking lot. It’s a picturesque sight, as the genial twilight sun’s rays fondle the terracotta-lined crown of the cottage, the venue for our Magic Square experience this evening.
Once upon a time, people associated hotel bars with paying lavish prices for mediocrity. But in Singapore, that has become patently untrue with the multitude of lauded bar concepts found in our hotels and the latest addition, Quaich Wanderlust, once again shows the quality of our hotel bars. [Update: Mooi Patisserie has closed and reopened as Wren Cafe.] Unsurprisingly, we’ve seen a growing stable of chefs venturing out into their own cafes and F&B operations of late. Singapore’s pastries and cafe scenes are thriving after all, maybe growing even more robustly than the restaurant ecosystem. Inserting itself into the ranks of personally headed projects is Mooi Patisserie by Chef Gail Ho, a pastry chef who’d previously earned a Michelin star at Meta.
There’s an enigmatic restaurant settled right in the corner unit of the junction connecting Carpenter Street and South Bridge Road. One affixed with tall glass panes but also paradoxically enshrouded within pale white drapes, providing little clues besides a sleekly stylised “LUMO” stencil on the windows.
There’s an image that has been attributed to wine bars over the decades. It’s one that’s stuffy, it’s inaccessible, and it’s opulent. But there’s currently a renewed struggle to escape from that culture as more and more new concepts like Vin Geek are joining in to fight the good fight.
Joo Chiat is a street that truly only bursts into life when the sun goes down and the lights turn on. Joining this nocturnal street is an aptly named Supperman Speakeasy & Grill, a grill concept where the common man can let up after a hard day’s work.
