Countless people vouch for Pasta Bar as the epitome of pasta making in Singapore. With a name as confidently chic and simple as “Pasta Bar”, you’d expect great finesse worthy of its moniker of being the pasta bar.
[Update: Salted & Hung has closed. Chef-Owner Drew Nocente has since opened a new concept, Cenzo.] Salted & Hung is a place that’s nestled deep into the crevices of my heart. Well, most Unlisted Collection concepts are infatuations. Needless to say, I found myself excitedly grabbing a table when they launched their redesigned set course menu in May, right before the dreaded dine-out restrictions hit again.
[Update: Le Vin Levain has since rebranded into Drunker Farmer and subsequently Common Man Night Shift.] With an ever-growing wave of Artisan Pizza parlours popping up all over Singapore, we’re spoilt for choice. Out of all of them, Le Vin Levain is one that has challenged my perception of price tag vis-a-viz Pizza quality.
While whisky bars are generally seen as stuffy, gentrified establishments that cater to pretentious old men sporting waistcoats — Malts is an exception to the rule.
It wasn’t surprising when Burger & Lobster opened at Jewel Changi in 2019. You’d have heard of many Singaporeans flocking to their London outlet, much like Flat Iron — which inspired the popular Featherblade.
Unlisted Collection is a company commonly associated with its adventurous fusion concepts, that’s why Majestic Bay was an interesting prospect for me.
[Update: Catfish has since undergone a significant revamp with a new Izakaya concept.] Chef Andrew Walsh (chef-owner of Cure, Club Street Wine Room, et al) opened one of my most heavily anticipated restaurant openings in Singapore in 2020 — Catfish at Telok Ayer.
[Update: Bar Milano has closed.] While I’m a fan of cool pizzas, I’m ashamed to say I hadn’t heard of pizza frittas until Bar Milano. I first knew of Bar Milano from my favourite food critic’s review, where she extolled on its demonstration of “the art of sprezzatura” — a sartorial concept of studied carelessness.
Amo was conceived by Beppe De Vito, owner of the Il Lido Group and Michelin-starred chef at Braci, in 2017. The chic, dimly-lit Italian joint sits along Hong Kong Street and has earned a reputation for its stunning doughy creations.
Peranakan cuisine is something many know but aren’t familiar with. Probably even less know that Singapore is home to the world’s first Michelin-starred Peranakan restaurant, Candlenut.
